Ever since we even started thinking about farming, we intended grass-fed dairy to be the centerpiece of the farm. But the dairy happens to be the more complicated thing to get up and running, as milking cows and processing milk it more capital-intensive than the pork and poultry we raise.
We’ve been busy drafting plans for a dairy construction or retrofit, researching equipment availability, and meeting with business planning coaches and lenders. In the meantime, we have begun growing a small grass-based herd of dairy cows. With the rich, creamy milk they produce, Josh continually hones his skills, turning the milk into a variety of fresh and aged cheeses along with yogurt and butter. Our pigs relish the leftover whey and milk!
